Mozzarella Zucchini Skillet

Sautéed zucchini and onion are simmered briefly in tomato sauce and topped with melted cheese to make a delicious side dish that's ready in 30 minutes.

Directions

Heat the oil in a 12-inch skillet over medium-high heat. Add the zucchini, onion and garlic powder and cook until the vegetables are tender-crisp.

Stir the sauce in the skillet and heat through.

Sprinkle with the cheese. Cover and cook until the cheese is melted.

Ingredients

2 tablespoons vegetable oil
5 medium zucchini, sliced (about 7 1/2 cups)
1 medium onion, chopped (about 1/2 cup)
0.25 teaspoon garlic powderor 1 clove garlic, minced
1.5 cups Prego® Traditional Italian Sauce
0.5 cup shredded mozzarella cheese or Cheddar cheese (about 2 ounces)
