Directions

Spray a 6-quart saucepot with vegetable cooking spray and heat over medium-high heat for 1 minute.  Season the turkey as desired.  Add the turkey and onion and cook for 5 minutes or until the turkey is cooked through, stirring occasionally.  Add the chili powder and cumin and cook and stir for 1 minute.

Stir in vegetable juice, pepper and beans and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the vegetables are tender.  Season to taste.

2 pounds 9% fat free ground turkey
1 large onion, chopped (about 1 cup)
2 tablespoons chili powder
0.5 teaspoon ground cumin
3.5 cups Low Sodium V8® Vegetable Juice
1 small green pepper, chopped (about 1/2 cup)
2 cans (about 15 ounces each ) kidney beans, rinsed and drained
